Holland College has been issued a cannabis research license which will allow Canada’s Smartest Kitchen, the research arm of The Culinary Institute of Canada, to support the development of safe and reliable edible products for the cannabis industry.
An NSERC Technology Access Centre, Canada’s Smartest Kitchen, also known as CSK, has been helping regional partners develop food and beverage products for more than a decade. Dr. Tim McRoberts, director of Canada’s Smartest Kitchen, said the license allows the team to expand its research into this rapidly growing area.
This as an opportunity for CSK to work closely with licensed producers by contributing culinary formulation expertise. Leveraging an excellent partnership with the applied research department at Holland College, CSK is well positioned to integrate culinary expertise into the cannabis edibles sector. The research and development partnerships are mutually beneficial. Canada’s Smartest Kitchen frequently hires culinary students to work on product development projects, giving them a unique experience and enabling them to acquire highly specialized skills; and, by partnering with Holland College, companies reduce the financial risk that can accompany research and development by giving them access to the college’s funding sources.
The cannabis research license was granted by Health Canada and comes with strict guidelines regarding the purchase, formulation, storage, and mandatory destruction of products. No sale, transfer, or sensory analysis testing of products containing cannabis is permitted under the licensing guidelines.
