How many students will be in my class?
Each year the program accepts approximately 30 new students representing a wide range of demographics.
Where is the program located?
The Pastry Arts program is based in the Tourism and Culinary Centre of Holland College, located on the beautiful Charlottetown waterfront at 4 Sydney St. There are approximately 350 students enrolled in Pastry Arts, Culinary Arts, Hotel and Restaurant Management, Marketing and Advertising Management, Tourism, Travel and Event Management, Project Management, and Data Analytics at the Tourism and Culinary Centre.
What is a typical class day like?
In September, students concentrate on their NCPR courses (Non-Credit Program Requirements) and the Pastry Fundamentals course. The Fundamentals course is four weeks long and includes demos and a kitchen class. Students will be divided evenly into morning or afternoon groups for the four weeks. In October, your classes follow a sequence of rotations, and depending on which rotation you are in, your day will begin at either 6:30 a.m. or 10:30 a.m. You will be required to complete three morning classes and three afternoon classes. A rotation schedule will be created for the year so you can organize any work schedules accordingly. A typical day in rotations includes a four-hour kitchen class as well as one hour of either COMP-1000 (first semester) or COMM-1005 (second semester) Tuesday to Friday. Your theory class will be on Monday mornings only.
What are my options when I graduate?
Employment
Students in the program will vary in age and prior work experience, so they arrive at the CIC with different goals and expectations. Graduates should have the skills, attitudes, and behaviours to effectively work in the preparation of pastry and baking production. Areas of employment may include but are not limited to, working in bakeries, cake shops, hotels, restaurants, food product development, sales, and cruise ships. In general, the hospitality industry is looking for energetic, enthusiastic, dedicated individuals who set high standards for themselves and are committed to providing quality service.
