Salary: Starts at $50k annually, scaled on education and experience. The Fogo Island Inn is a non-tipping enterprise and all staff participate in revenue sharing. This is distributed 3 times annually and in 2022 amounted to 50% of base earnings.
Hours Per Week: Typically 40 hours/week in high season, but schedueled as needed

Job Description

The Sous Chef, based at the Fogo Island Inn, will excel in a fast-paced and energetic environment. The Sous Chef will prepare menu items while maintaining and implementing exceptional service standards. General responsibilities • Provide leadership to the culinary team, assist with training and supervising kitchen staff • Maintain cleanliness and organization of kitchen and storage areas • Co-ordinate special events • Reduce food waste and equipment damage through development of training and practices • Reduce over production and over-ordering to control labor and food costs • Other responsibilities as necessary to enhance the guest experience

Qualifications

The ideal candidate: • Has formal culinary training and extensive professional experience using classic techniques • Understands regional ingredients and is eager to innovate • Has knowledge of various cooking procedures and methods • Is enthusiastic and friendly, has good communication skills, and enjoys working in a team environment • Safe Food Handling Certification would be an asset • Has the ability to adapt and react quickly to fluid situations while maintaining a positive attitude
