How often does anyone get the privilege to eat in one of Canada’s Top 10* restaurants? Probably more often than one has the privilege to become the Executive Chef at that restaurant. Now consider that this same restaurant is a Canadian National Heritage Site, is part of T he Inn by Mallard Cottage, a 5-star, Newfoundland hospitality legend, and suddenly this isn’t a job, It’s a calling. Mallard Cottage Restaurant has stood guard near the entrance of Quidi Vidi Harbour for nearly as long as it’s been a harbour. Two centuries, give or take. Built and lived in by the same family for much of that time, it was lovingly transformed into a restaurant in 2013 and has been reimagining and reinvigorating the culinary landscape of T he Rock ever since. However none of that adulation (or pay) comes easily, you’ll need to prove you’re worth your weight in saffron (a true chef would gasp at this) before we let you wear the coveted Mallard Cottage Executive Chef’s Apron. (Yes, we’ve named it and it is capitalized.) Mallard Cottage Restaurant’s next great chef will already have, or will show they can quickly develop a deep understanding of the history, tradition, richness, and subtleties of Newfoundland cuisine. You’ll be challenged to bring undiscovered ones to the table, or make up a few soon-to-be must-have menu items that are at the same time steeped in Newfoundland flavour yet surprisingly new. In short, you’re not a chef - you’re a deity of daring dishes, a conjurer of kitchen wonders able to capture and keep in rapture the attention of foodies and casual diners alike. And as the supreme ruler over range and rotisserie, you’ll lead, inspire, and encourage a crack team who’ll work closely with you to grow our clientele, reputation, and coffers. It’s not all medals and TV interviews though, there are some basics, and not-so-basics you need to have in your menu – so make a meal of our Executive Chef’s duties & responsibilities, and the requirements you’ll need to begin serving up spectacular.

Qualifications • Have 5 years’ experience as a Head Chef. • Be able to accurately track expenses and manage budgets. • Demonstrate a sense of ownership and pride in their performance and its impact on our success. • Be a consummate team player. No kitchen runs on ego alone. • Possess strong time-management skills – a master multitasking maven • Have great interpersonal and communication skills. • Exude and express a strong passion for the fine art of food design. • Hold a valid culinary degree or have equivalent experience. Duties & Responsibilities • Work with management to hire, train, manage, inspire, appreciate staff. • Work with management to design menus that provide customers with an unforgettable and unique Newfoundland culinary experience. • Lead, manage and inspire kitchen team in alignment with the restaurant’s vision and standards. • Develop innovative menus & culinary concepts that cater to our target customer base and reflect current culinary trends. • Ensure the highest standards of food quality and presentation are consistently achieved. • Manage inventory, including selecting and maintaining vendor relationships, and ensure quality ingredient sourcing. • Cultivate and maintain relationships with local suppliers to insure diversity, quality and availability of ingredients. • Oversee budgeting for the kitchen, including food costs, supplies, and labor. • Train and mentor kitchen staff, promoting a culture of excellence and continuous learning. • Implement and maintain food safety and hygiene protocols. • Collaborate with restaurant management to enhance customer satisfaction and operational efficiency.
